Choose a tea that you like, but the stronger the tea the heavier or smokier the flavor when the chicken is grilled. The salt + sugar in the rub creates a light curing effect that keeps the chicken moist as it grills. The aromatic Chinese 5-spice blend is made up of anise seed, star anise, cloves, and ginger.

  1. Mix tea leaves, sugar, salt, Chinese 5-spice, and garlic powder in small bowl. Rub over chicken pieces, coating well. Place in shallow pan; cover and refrigerate for at least 1 hour.

  2. Heat grill to medium-high heat. Place chicken pieces on grill; cook 35 to 40 minutes, turning once, until no longer pink in center and internal temperature reads 165°F on an instant-read thermometer. Remove the breast pieces if they are done before the legs and thighs.

*If you are using tea bags, each bag usually holds about 1-1/2 teaspoons—so 8 teabags would be enough for this rub.
