Sage Butter-Roasted Chicken Breasts

Sage is the primary flavor in commercial poultry seasoning because it complements chicken, turkey, and game birds so well. Using fresh leaves, chopped up and blended into a dish of butter, makes the perfect self-basting mixture for bone-in breasts.

3 tablespoons softened butter
1 tablespoon finely chopped fresh sage
4 (2 pounds) Just BARE® Bone-In Split Chicken Breasts
Coarse salt and freshly ground pepper to taste
Fresh lemon wedges and sprigs of fresh sage


Heat oven to 425°F. Mash the butter and 1 tablespoon sage together with a fork in a small bowl. Loosen the skin over the chicken breasts with your fingers; gently spread sage butter over chicken under the skin. Smooth the skin back over the meat; season with salt and pepper. Place chicken skin-side up on foil-lined rimmed baking sheet.

Place chicken in oven. Roast, uncovered, 20 to 25 minutes or until no longer pink near bone. Serve chicken with a squeeze of lemon, garnished with more sage.


Just BARE® Bone-In Chicken Thighs may be substituted for Just BARE® Bone-In Split Chicken Breasts.
