Meal #1: Twin Roasted Chickens with Grematola Butter Sauce

2 (3.5 pounds each) Just BARE® Whole Chickens
½ cup softened butter, divided
Coarse salt and freshly ground pepper to taste
1 lemon, zested and juiced
1 clove garlic, finely chopped
2 tablespoons finely chopped parsley
Roasted sunflower seeds, if desired


Heat oven to 425˚F. Rub each chicken with 1 tablespoon butter; season generously with salt and pepper. Grate the lemon peel from the lemon; halve and squeeze the juice into a small bowl. Stuff a squeezed lemon half into each chicken. Tie the chicken legs with kitchen twine; arrange chickens side by side on a large rimmed baking sheet.

Place chickens in oven; roast for 50 minutes to 1 hour or until no longer pink near the bone and juices run clear (165˚F internal temperature on an instant read thermometer near the thigh bone.)

Meanwhile, melt the remaining butter in a small saucepan over medium-low heat. Stir in the lemon peel and juice, garlic, and parsley until well blended.

Carve one chicken to serve four people. Drizzle with butter sauce, sprinkled with sunflower seeds.
