Posole is like chili, in that you can load up the table with condiments that each diner can spoon into their bowl. Crisp, spicy sliced radishes, pungent green onions, chopped ripe avocado, fresh cilantro leaves, and your go-to hot sauce are favorites.


  1. Heat oil in large soup kettle or Dutch oven over medium-high heat. Add onion and garlic; cook, stirring occasionally, about 3 minutes.

  2. Add chicken, cumin, coriander, and oregano to kettle; stir in broth and 2 cups water. Bring to a boil; reduce heat to low and simmer about 30 minutes or until chicken is no longer pink in center. Cook to internal temp of 165°F. Remove chicken to plate; cool.

  3. Add chunks of corn, hominy, and chiles to kettle. Simmer soup for 15 minutes. Shred the chicken; stir into pot. Season with salt and pepper. Serve hot with desired garnishes (see headnote).
