Fresh herbs, citrus and olive oil make the base of this simple Greek chicken marinade. Paired with nutrient and fiber packed rainbow bean salad, this meal will sure keep you full and satisfied!

Instructions

  1. Prepare Greek chicken marinade by combining all the ingredients other than chicken in a bowl - whisk until combined. Add chicken and coat thoroughly, marinate for at least 30 minutes. Marinate overnight for best results.
  2. Combine beans, couscous, tomatoes, cucumbers and onions in a bowl.
  3. In a smaller bowl, combine ingredients for dressing and mix until combined.
  4. Toss dressing with salad and season to taste with salt and pepper.
  5. Finish with feta crumbles.
  6. Preheat a cast iron or grill pan on medium-high heat. Remove chicken from marinade and begin to sear in batches to prevent overcrowding.
  7. Sear for 7-8 minutes on both sides until lightly browned and chicken reaches a minimum internal temperature of 165°F - remove and allow to rest before slicing.
  8. To serve, in a bowl or meal prep container, add a base of rainbow bean salad followed by a portion of sliced Greek Chicken.
