1. In a large bowl, add the shredded chicken, avocado, corn, onion, red bell pepper, and cilantro. Drizzle with the lime juice, olive oil and season; toss gently until all the Ingredients are combined. Taste and adjust seasoning with salt and pepper to your liking. Serve over a bed of greens or roll-up in your favorite sandwich wrap!


For little added kick, add 1 jalapeƱo or serrano chile, seeded and finely chopped. Boost it up even more with 1/4 cup drained and rinsed canned black beans.
