Fiesta Chicken Salad

Ingredients 

2 cups shredded or chopped rotisserie chicken
1 ripe large avocado, pitted and diced
3/4 cup fresh, canned, or frozen corn kernels
3 green onions, thinly sliced
1/3 cup diced red bell pepper
3 tablespoons chopped cilantro
2 tablespoons lime juice
2 tablespoons olive oil
Salt and pepper, to taste

Instructions 

In a large bowl, add the shredded chicken, avocado, corn, onion, red bell pepper, and cilantro.

Drizzle with the lime juice, olive oil and season; toss gently until all the Ingredients are
combined.

Taste and adjust seasoning with salt and pepper to your liking. Serve over a bed of greens or
roll-up in your favorite sandwich wrap!

Tips 

For little added kick, add 1 jalapeño or serrano chile, seeded and finely chopped.
Boost it up even more with 1/4 cup drained and rinsed canned black beans.
