This combo of flavors is pure autumn—pears at their peak, paired up with tender golden chicken, finished with the sweet-savory dash of balsamic vinegar and blue cheese. Familiar and comforting—the twist being in the reduction of the vinegar and honey to a thick syrup. Serve with a fluffy quinoa or couscous pilaf or soft, buttery polenta.
Bring vinegar and honey to boiling in small saucepan over medium-high heat. Cook about 12 minutes, stirring occasionally, until reduced to about 1/3 cup.
Meanwhile, heat butter and oil in large skillet over medium-high heat. Season chicken with salt and pepper; sauté about 10 minutes, turning once, until no longer pink in center. Remove to plate and keep warm.
Add pears to skillet; sauté 5 minutes or until golden and tender. Serve with chicken, topped with cheese and a drizzle of balsamic syrup.
