Serve this brothy beans & greens one-dish meal with a big pot of steamed converted rice for a prosperous New Year.
Cook bacon in a large, deep pan until crisp. Remove bacon and reserve.
Season chicken with salt and pepper; brown chicken over medium-high heat in bacon fat. Remove to a plate; drain all but 2 tablespoons fat from pan.
Add onion, celery, green pepper, and garlic to pan. Sauté 5 minutes or until softened. Return chicken to pan, with black-eyed peas, broth, thyme, and bay leaves. Partially cover pan; simmer about 25 minutes or until chicken is no longer pink near bone. Cook to internal temp of 165°F. Remove from pan, along with bay leaves, and keep warm.
Stir in greens and red pepper; cover pan and cook 5 minutes longer or until greens are wilted.
Serve chicken, with beans and greens over rice with hot pepper sauce.
