Asian-Inspired BBQ Chicken Thigh Skewers with Bok Choy Slaw and Rice

Ingredients

  • Chicken Ingredients:
    • 9 Just Bare boneless, skinless chicken thighs
    • 1 cup BBQ sauce
    • 1/2 cup gochujang (Korean chili paste)
    • 1/4 cup soy sauce
    • 2 tablespoons rice wine vinegar
    • 2 tablespoons sesame oil
    • 1 tablespoon fresh ginger, chopped
    • 1 tablespoon fresh garlic, chopped
    • Bamboo skewers, soaked in water for 30 minutes
  • Bok Choy Slaw:
    • 4 cups thinly sliced bok choy
    • 1/4 cup shredded carrots
    • 2 tablespoons chopped cilantro
    • 2 tablespoons chopped green onions
    • 2 tablespoons rice vinegar
    • 1 tablespoon sesame oil
    • 1 teaspoon honey
    • Salt and pepper to taste
  • Serving:
    • Cooked rice of your choice

Instructions

Marinate the Chicken Thighs

  1. In a bowl, mix together BBQ sauce, gochujang, soy sauce, rice wine vinegar, sesame oil, chopped ginger, and chopped garlic.
  2. Cut the thighs to your desired size for the skewers.  Place the chicken thighs in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, making sure each piece is well coated. Marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

Prepare the Bok Choy Slaw

  1. In a large bowl, combine thinly sliced bok choy, shredded carrots, chopped cilantro, and chopped green onions.
  2. In a small bowl, whisk together rice vinegar, sesame oil, honey, salt, and pepper.
  3. Pour the dressing over the bok choy mixture and toss until well combined. Refrigerate until ready to serve.

Skewer and Grill the Chicken Thighs

  1. Preheat your grill to medium-high heat. Meanwhile, thread the marinated chicken thighs onto the soaked bamboo skewers.
  2. Grill the skewers for 6-8 minutes per side, or until the chicken is cooked through and has charred grill marks.

Serve with Bok Choy Slaw and Rice

  1. Serve the grilled chicken thigh skewers alongside the bok choy slaw and cooked rice.
  2. Garnish with additional chopped cilantro and green onions, if desired.
