Tomato and Fresh Mozzarella Chicken Breast Stack
Gremolata chicken breasts are split horizontally to create pockets. Each one is then stacked with fresh mozzarella cheese, ripe tomatoes and basil, baked and served between toasted French bread slices for a flavorful sandwich.

Reserved juice from one lemon

thin slices fresh mozzarella cheese

ripe tomato, cut into thin slices

fresh basil leaves

slices crusty French bread, toasted
Directions
- Preheat oven to 425º F.
- In a shallow plate, mix together parsley, lemon zest, garlic, salt and pepper. Coat chicken breasts with herb mixture.
- In a large skillet, sauté chicken breasts in olive oil over medium-high heat for 6 to 8 minutes per side. Squeeze juice of lemon over chicken. Continue sautéing for 3 to 4 minutes or until chicken is golden brown and there is no hint of pink in the meat. Remove from skillet to cool.
- When cool enough to handle, split chicken breast horizontally to make a pocket. Spoon cheese into the pocket of each chicken breast; stuff with spinach leaves. In a baking dish, bake filled chicken breasts at 425º F for 8 to 10 minutes or until cheese is soft. Remove from oven.
- Squeeze juice of a lemon over chicken; drizzle with additional olive oil if desired. Serve chicken breasts between two slices of toasted French bread.
