Slow Simmered Mushroom and Herb Drumsticks

Fresh mushrooms and white wine simmer with herb coated drumsticks.
Prep Time: 15 minutes Cook Time: 30 minutes Yield: Makes 5 to 8 drumsticks, 2 cups mushroom sauce

Ingredients

2 tablespoons all purpose flour
2 teaspoons chopped fresh thyme leaves
2 teaspoons chopped fresh sage leaves
1 teaspoon chopped fresh rosemary sprigs
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
5 to 6 (20 ounces) Just BARE® Chicken Drumsticks
2 tablespoons butter
1 medium onion, cut into thin wedges
1 package (8 ounces) fresh mushrooms, sliced
2 cloves garlic, minced
1/4 cup chopped fresh parsley
1 cup white wine or chicken broth
1/4 cup water
2 tablespoons chopped fresh parsley
Coarse ground pepper

Directions

  1. In a shallow bowl, stir together flour, thyme, sage, rosemary, salt and pepper. Coat chicken drumsticks with flour mixture.
  2. In a large skillet, sauté drumsticks in olive oil over medium-high heat for 8 to 10 minutes.
  3. Add butter, onions, mushrooms and garlic around drumsticks. Stir in ¼ cup parsley. Continue sautéing for 8 to 10 minutes, turning occasionally, until browned on all sides.
  4. Reduce heat to medium and gradually add wine.
  5. As sauce thickens, add water and parsley. Cook for 10 minutes or until there is no hint of pink in the meat.
  6. Sprinkle with coarse ground pepper before serving. Serve drumsticks with broth over mashed potatoes if desired.
