Ingredients
for the chicken
1 cup plain yogurt
Juice of 2 limes
1 tablespoon coriander seeds, crushed
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 package (20 ounces)
Just BARE® Hand-Trimmed Boneless Skinless Chicken Thighs
olive oil for sautéing
for the beets
2 beets, peeled and thinly shaved with vegetable peeler
2 cups beet greens, torn
1/2 teaspoon salt
1/4 teaspoon pepper
Zest and juice of 1 orange

Directions
• In small bowl, stir together all chicken ingredients except chicken thighs. Coat chicken thighs with yogurt mixture.
• In large skillet, sauté thighs in olive oil over medium high heat, about 6 to 8 minutes per side, or until meat is no longer pink.
• During the last 5 minutes of cooking, add shaved beets around chicken. Add beet greens around chicken; sprinkle greens with salt and pepper. Continue to sauté over medium heat for another 2 to 3 minutes or until beet greens are wilted. Season with the zest and juice of 1 orange.
• Serve thighs alongside the cooked beets and greens.
