Spiced Yogurt Boneless Skinless Chicken Thighs with Shaved Beets
Spiced Yogurt Chicken Thighs seasoned with chili and coriander are grilled until deliciously tender. Next, shave beets with vegetable peeler and sauté with beet greens and chicken thighs.

Yield: Makes 6 to 8 thighs, 2 cups salad
Ingredients
for the chicken
1 cup plain yogurt
Juice of 2 limes
1 tablespoon coriander seeds, crushed
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
olive oil for sautéing
for the beets
2 beets, peeled and thinly shaved with vegetable peeler
2 cups beet greens, torn
1/2 teaspoon salt
1/4 teaspoon pepper
Zest and juice of 1 orange
Directions
• In small bowl, stir together all chicken ingredients except chicken thighs. Coat chicken thighs with yogurt mixture.
• In large skillet, sauté thighs in olive oil over medium high heat, about 6 to 8 minutes per side, or until meat is no longer pink.
• During the last 5 minutes of cooking, add shaved beets around chicken. Add beet greens around chicken; sprinkle greens with salt and pepper. Continue to sauté over medium heat for another 2 to 3 minutes or until beet greens are wilted. Season with the zest and juice of 1 orange.
• Serve thighs alongside the cooked beets and greens.
