Lime Chili Chicken Satays
Chicken breasts tenders are skewered and marinated with lime and fish sauce for an authentically Asian flavor, then grilled or broiled to perfection. Steamed rice and Sweet Chili Sauce make delicious complements to the chicken.

Lime Chili Chicken Satays
Ingredients
for the marinade
1/4 cup fish sauce
1 tablespoon olive oil
Juice of 1 lime
1 teaspoon cracked coriander seed
1 teaspoon chopped fresh cilantro leaves
for the satays
Wooden skewers, soaked in water for 30 minutes
for sweet chili sauce
1/2 cup sugar
1/2 cup rice vinegar
1 clove garlic, minced
1/2 teaspoon red chili flakes
Directions
• In shallow dish, whisk together marinade ingredients; add chicken tenders and marinate for 15 minutes. Thread chicken tenders onto prepared skewers.
• Grill over medium hot coals or broil under high broiler for 4 to 5 minutes per side. Chicken should be fork tender with no hint of pink in the meat.
• Meanwhile, in small saucepan, cook sugar and vinegar over low heat for 5 minutes. Stir in garlic and chili flakes. Continue cooking for 2 to 3 minutes or until slightly thickened. Serve with satays and steamed rice (if desired).
