Olive Oil and Thyme Drumsticks
Drumsticks are rubbed with olive oil and thyme and sautéed. Serve with a simple cannellini bean salad for a flavorful accompaniment.

Yield: Makes 5 to 6 drumsticks, 3 cups salad
Ingredients
for the chicken
2 tablespoons olive oil, divided
2 teaspoons chopped fresh thyme leaves
1/2 teaspoon coarse salt
1 package (20 ounces) Just BARE® Chicken Drumsticks
1 to 2 tablespoons water
for the salad
1 can (15 ounces) cannellini beans, drained and rinsed
2 green onions, finely chopped
1 tomato, chopped
1 teaspoon chopped fresh thyme leaves
for the dressing
1 teaspoon Dijon mustard
1 teaspoon honey
Zest and juice of 1 lemon
1/4 teaspoon salt
Directions
• Mix together 1 tablespoon oil, thyme and salt; rub on drumsticks.
• In large skillet, heat 1 tablespoon of oil over medium-high heat. Add drumsticks and sauté 10 to 15 minutes, turning occasionally. Add 1 to 2 tablespoons water to skillet during cooking to assure doneness. Pan juices should run clear with no hint of pink in the meat.
• Toss together salad ingredients; let stand at room temperature. Whisk together dressing ingredients. Pour dressing over salad and serve with drumsticks.
