Gremolata Seasoned Chicken Breast Fillets
Gremolata makes a savory crust of finely chopped fresh parsley, lemon and garlic for chicken breasts. These breasts can be stacked with a variety of cheeses and vegetables to create delicious main meals for any season.

Yield: Makes 2 to 3 breasts
Ingredients
2 tablespoons chopped fresh parsley
1 teaspoon finely chopped lemon zest, reserve lemon for juice
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
Reserved juice from one lemon
Directions
• In shallow plate, mix together parsley, lemon zest, garlic, salt and pepper. Coat chicken breasts with herb mixture.
• In large skillet, sauté chicken breasts in olive oil over medium-high heat for 6 to 8 minutes per side. Squeeze juice of reserved lemon over chicken. Continue sautéing for 3 to 4 minutes or until chicken is golden brown and there is no hint of pink in the meat.
• If desired, serve open faced on toasted bread.

NOTE: before starting the recipe, each whole boneless skinless breast will need to be cut into 2 fillets using a sharp knife.
