Basil and Plums Sautéed with Ginger Honeyed Chicken

Basic Glazed Chicken Tenders with Ginger are sautéed with onions and plums to create a simple supper that will become a fall favorite.

Ingredients

1 tablespoon butter
14 ounces Just BARE® Hand-Trimmed Boneless Skinless Chicken Breast Tenders
2 tablespoons peeled, finely chopped ginger
3 cloves garlic, finely chopped
1 medium red onion, coarsely chopped
1 teaspoon salt
1/2 teaspoon pepper
3 ripe plums, pitted and sliced into thin wedges
1 tablespoon honey
2 tablespoons cider vinegar
Juice of 1 lime
2 tablespoons fresh basil leaves, chiffonade

Directions

  1. In large skillet, melt butter over medium high heat. Add chicken breast tenders, ginger, garlic, onion, salt and pepper. Cook, turning occasionally, for 6 to 8 minutes or until chicken just begins to brown.
  2. Add plums during the last five minutes of cooking. Stir in honey and drizzle with cider vinegar. Continue cooking, turning occasionally, for 3 to 4 minutes or until chicken is golden brown and glazed.
  3. Just before serving, squeeze lime juice over the chicken tenders and sprinkle with basil leaves.

Substitutions/Variations

You may substitute apples for plums.
