Garlic Studded Roasted Chicken
Cloves of garlic and thyme sprigs are tucked under the skin and coarse sea salt and pepper make the crust for this roasted chicken.

Yield: Makes 1 whole chicken, 1/2 cup pan juices
Ingredients
1 (3-1/2 pounds) Just BARE® Whole Chicken
3 small onions, thinly sliced
3 cloves garlic, thinly sliced
6 sprigs fresh thyme leaves
1 tablespoon olive oil
1 teaspoon coarsely ground sea salt
1/2 teaspoon coarsely ground pepper
Directions
1.  Preheat oven to 425° F before roasting to ensure even cooking. If desired, rinse and pat dry chicken. Tuck wings under and tie legs together with kitchen twine.
2.  Place chicken into heavy roasting pan. Loosen skin around chicken; with wooden spoon tuck slices of 1 onion, garlic slices and thyme sprigs under skin. Rub olive oil over chicken; sprinkle with sea salt and pepper. Roast for 50 to 60 minutes, or until meat thermometer reaches an internal temperature of 165° F.
3.  Add sliced onions to roasting pan during last 10 minutes of roasting. Let stand 5 minutes before carving, meat temperature will rise as it rests. Serve with pan juices.

Substitutions/Variations

A mixture of thyme, rosemary and sage can be tucked under the skin in place of the garlic and thyme.
