Feta and Olive Chicken Breast Stack with Tabouleh

Gremolata Chicken Breasts are split horizontally to create pockets. Each one is then filled with a delightful blend of feta cheese, Mediterranean olives and parsley, and baked. Serve over purchased tabouleh for a hearty entrée.

Ingredients

2 tablespoons chopped fresh parsley
1 teaspoon finely chopped lemon zest, reserve lemon for juice
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
2 to 3 (14 ounces) Just BARE® Hand-Trimmed Boneless Skinless Chicken Breasts
Reserved juice from one lemon
2 tablespoons crumbled Feta cheese
2 tablespoons pitted, finely chopped Mediterranean olives
1 tablespoon finely chopped fresh parsley
1 cup purchased tabouleh

Directions

  1. Preheat oven to 425º F.
  2. In a shallow plate, mix together parsley, lemon zest, garlic, salt and pepper. Coat chicken breasts with herb mixture.
  3. In a large skillet, sauté chicken breasts in olive oil over medium-high heat for 6 to 8 minutes per side. Squeeze juice of lemon over chicken. Continue sautéing for 3 to 4 minutes or until chicken is golden brown and there is no hint of pink in the meat.
  4. Remove from skillet to cool. When cool enough to handle, split chicken breast horizontally to make pocket. Meanwhile, in a small bowl, stir together feta cheese, olives and parsley. Fill pocket of each chicken breast with feta cheese mixture.
  5. In a baking dish, bake filled chicken breasts at 425º F for 8 to 10 minutes or until cheese is soft. Remove from oven. Serve chicken breasts over tabouleh.

Substitutions/Variations

Pita pockets may be substituted for the tabouleh.

Nutritional values may change if you choose to substitute another chicken product. If substituting frozen chicken for this recipe, thaw before cooking. If substituting fresh whole boneless skinless chicken breasts, cut the whole breast in half before preparing.
