Coriander and Dill Seeded Chicken Tenders
Coriander, the seeds of cilantro, and dill seed blend with cilantro and dill weed to impart summer flavor to the basic recipe for Mustard Coated Chicken Tenders. A simple cucumber yogurt sauce is the perfect complement for dipping.

mayonnaise
1 tablespoon
Dijon mustard
2 cloves
garlic, minced
2 teaspoons
finely chopped fresh thyme leaves
1/2 teaspoon
salt
1/2 teaspoon
pepper
1 tablespoon
crushed coriander seed
1 teaspoon
crushed dill seed
1 tablespoon
olive oil

DIPPING SAUCE
1/4 cup
plain yogurt
1 tablespoon
mayonnaise
1/4 cup
finely chopped cucumber
1 tablespoon
chopped fresh cilantro leaves
1 teaspoon
chopped fresh dill weed
FINAL TOUCH
2 tablespoons
chopped fresh cilantro leaves
1 tablespoon
chopped fresh dill weed
Directions
- In a medium bowl, stir together mayonnaise, mustard, garlic, thyme leaves, salt, pepper, coriander and dill. Coat chicken tenders with mayonnaise mixture. Let stand at room temperature for 5 minutes.
- In a large skillet, sauté chicken in olive oil over medium high heat for 4 to 5 minutes per side. Chicken should be fork-tender with no hint of pink in the meat.
- Meanwhile, in a small bowl, stir together all cucumber dipping sauce ingredients. Sprinkle chicken with cilantro leaves and dill weed before serving. Serve cucumber yogurt sauce with chicken tenders.
