Chorizo Chicken Breast Fillets with Cannellini Beans and Tomatoes
This hearty salad starts with the basic recipe for Chicken Breasts with Chorizo but adds canned tomatoes, cannellini beans and kale simmered in pan juices to create a truly comforting, warm meal.

olive oil

smoked or dried chorizo, 1/4-inch sliced
1 bunch
(about 2 cups)
torn Dinosaur kale greens
1 can

diced tomatoes

(15 ounces)
cannellini beans, rinsed and drained
1 tablespoon
chopped fresh sage leaves
1 teaspoon
chopped fresh rosemary sprigs
1 cup
chopped fresh flat leaf parsley
Directions
- Sprinkle cumin, salt and pepper over chicken breasts.
- In a large skillet sauté chicken breasts and onion slices in olive oil over medium high heat for 8 minutes. Turn chicken; add chorizo to onions. Continue sautéing for 6 to 8 minutes or until browned and there is no hint of pink in the meat.
- Add kale greens to chicken mixture during the last 5 minutes of cooking. Remove chicken breasts from pan. Stir remaining ingredients into chorizo and onion mixture; cook over medium high heat for 4 to 5 minutes or until warmed through. Serve bean salad in individual bowls with sliced chicken breasts over the top.
