smoked or dried chorizo, 1/4-inch sliced
1
poblano chili pepper, seeded and cut into 1-inch pieces

jalapeño pepper, seeded and finely chopped
1
fresno chili pepper, seeded and finely chopped
1 can

black beans, rinsed and drained
1 cup
chopped fresh flat leaf parsley
1/4 cup
chopped fresh cilantro leaves

Directions

Sprinkle cumin, salt and pepper over chicken breasts.

In a large skillet, sauté chicken breasts and onion slices in olive oil over medium high heat for 8 minutes. Turn chicken; add chorizo and peppers to onions. Continue sautéing for 6 to 8 minutes or until chicken is browned and there is no hint of pink in the meat.

Remove breasts from pan. Stir in beans into chorizo, onion and pepper mixture; heat through. Stir in parsley and cilantro. Spoon salad over chicken breasts; serve.
