Chorizo Chicken Breast Fillets with Black Beans and Chilies
This dish starts with the basic recipe for Chicken Breasts with Chorizo, but tops them with a salad of black beans and Fresno chili peppers to dial up the warmth just in time for those first cool fall days.

Ingredients
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
2 to 3 (14 ounces) Just BARE® Hand-Trimmed Boneless Skinless Chicken Breasts
1 onion, thinly sliced
1 tablespoon olive oil
5 ounces (about 1 cup) smoked or dried chorizo, 1/4-inch sliced
1 poblano chili pepper, seeded and cut into 1-inch pieces
1 jalapeño pepper, seeded and finely chopped
1 fresno chili pepper, seeded and finely chopped
1 can (15 ounces) black beans, rinsed and drained
1 cup chopped fresh flat leaf parsley
1/4 cup chopped fresh cilantro leaves
Directions
1.  Sprinkle cumin, salt and pepper over chicken breasts.
2.  In a large skillet, sauté chicken breasts and onion slices in olive oil over medium high heat for 8 minutes. Turn chicken; add chorizo and peppers to onions. Continue sautéing for 6 to 8 minutes or until chicken is browned and there is no hint of pink in the meat.
3.  Remove breasts from pan. Stir in beans into chorizo, onion and pepper mixture; heat through. Stir in parsley and cilantro. Spoon salad over chicken breasts; serve.
