Boneless Skinless Chicken Thighs with Spiced Yogurt
Chicken thighs are coated with chili and coriander spiced yogurt and grilled until deliciously tender. A salad or side dish made with seasonal vegetables completes the meal.

Ingredients
1 cup plain yogurt
Juice of 2 limes
1 tablespoon coriander seeds, crushed
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper

Directions
1.  Prepare the grill. In a small bowl, stir together all of the ingredients except the chicken thighs. Coat chicken thighs with yogurt mixture. Grill chicken over medium hot coals for 6 to 8 minutes per side or until chicken is done and there is no hint of pink in the meat.
