Basil Tomatoes and Olives with Slow Simmered Drumsticks
A splash of balsamic vinegar and basil season tomatoes and olives that simmer with drumsticks.

Yield: Makes 5 to 8 drumsticks, 2 cups sauce

2 teaspoons
chopped fresh thyme leaves
2 teaspoons
chopped fresh sage leaves
1 teaspoon
chopped fresh rosemary sprigs
1 teaspoon
salt

butter

medium onion, cut into thin wedges
3
ripe tomatoes, cut into wedges
1 cup
white wine or chicken broth
1/4 cup
water
2 tablespoons
chopped fresh parsley
1/4 cup
sliced, pitted olives
1/4 cup
chopped fresh basil leaves
1 tablespoon
balsamic vinegar
Directions
- In a shallow bowl, stir together flour, thyme, sage, rosemary, salt and pepper. Coat chicken drumsticks with flour mixture.
- In a large skillet, sauté drumsticks in olive oil over medium-high heat for 8 to 10 minutes. Add butter, onions and tomatoes around drumsticks. Continue sautéing for 8 to 10 minutes, turning occasionally, until browned on all sides.
- Reduce heat to medium and gradually add wine. As sauce thickens add water and parsley. Cook for 10 minutes or until there is no hint of pink in the meat.
- In the last 5 minutes of cooking, add olives, basil, and balsamic vinegar. Serve drumsticks with broth over spaghetti or fettuccine if desired.
