Basil Tomatoes and Olives with Slow Simmered Drumsticks

A splash of balsamic vinegar and basil season tomatoes and olives that simmer with drumsticks.
Prep Time: 10 minutes Cook Time: 30 minutes Yield: Makes 5 to 8 drumsticks, 2 cups sauce

Ingredients

2 tablespoons all purpose flour
2 teaspoons chopped fresh thyme leaves
2 teaspoons chopped fresh sage leaves
1 teaspoon chopped fresh rosemary sprigs
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
5 to 6 (20 ounces) Just BARE® Chicken Drumsticks
2 tablespoons butter
1 medium onion, cut into thin wedges
3 ripe tomatoes, cut into wedges
1 cup white wine or chicken broth
1/4 cup water
2 tablespoons chopped fresh parsley
1/4 cup sliced, pitted olives
1/4 cup chopped fresh basil leaves
1 tablespoon balsamic vinegar

Directions

  1. In a shallow bowl, stir together flour, thyme, sage, rosemary, salt and pepper. Coat chicken drumsticks with flour mixture.
  2. In a large skillet, sauté drumsticks in olive oil over medium-high heat for 8 to 10 minutes. Add butter, onions and tomatoes around drumsticks. Continue sautéing for 8 to 10 minutes, turning occasionally, until browned on all sides.
  3. Reduce heat to medium and gradually add wine. As sauce thickens add water and parsley. Cook for 10 minutes or until there is no hint of pink in the meat.
  4. In the last 5 minutes of cooking, add olives, basil, and balsamic vinegar. Serve drumsticks with broth over spaghetti or fettuccine if desired.
